Bubbly Blonde

Ingredients:

• 2 oz chilled Rue de Rêve Blanc 

• 3/4 oz lime cordial*

• 1/4 oz lime juice

• 2 oz chilled soda water

• 2 oz chilled sparkling wine (we like Une Femme Betty Sparkling Brut)

• Garnish with mint sprig

To Serve:

(serve in a wine glass)

1. Add Rue de Rêve, cordial, and lime juice to the wine glass and fill with ice.  

2. Add the sparkling wine and soda.  

3. Stir gently with a bar spoon to mix.  

4. Garnish with mint sprig.

Lime Cordial Recipe

Ingredients:

1. 8 oz (by vol) white sugar

2. 8 oz (by vol) water

3. Microplaned zest of 4 limes (use ones with thick skins)

4. 3 oz fresh lime juice

Instructions:

1. Get water to a boil, add sugar and lime zest, stir to mix.  

2. Reduce heat to a simmer for 2 minutes.  

3. Remove from heat and allow to cool.  

4. Strain through a fine mesh sieve.  

5. Add lime juice. 

Note: Makes enough for several spritzes. Keeps in the refrigerator for up to 2 weeks.
